Raw Foods – Asian Sprouted Bean Salad Recipe

Serves

4

Ingredients

  • 4 carrots, grated
  • ½ head of white or red cabbage, grated
  • 1 red pepper, sliced finely
  • 1 yellow pepper, sliced finely
  • 150g sprouted bean mix
  • Handful sugar snaps, cut in half
  • 50g roasted cashew nuts, optional
  • 50g roasted sesame seeds, optional
  • ½ pack bean sprouts
  • 10g arame or wakame seaweed, optional, soaked in water then drained

Dressing

  • ½” square of ginger
  • A clove of garlic
  • 3tbsp tamari or soy sauce
  • Juice of 2 lemons
  • 4tsp honey
  • 150ml sunflower or olive oil

Method

Prepare the vegetables, nuts, seeds, sprouts and seaweed.

To make the dressing put all of the ingredients in a blender and blitz until incoporated. Pour over the vegetable mix.
