Cinnamon Granola Recipe

Makes

450g, serves 18

Ingredients

  • 2 Medjool dates, stoned and finely chopped
  • 2tbsp boiling water
  • 300g mixed nuts
  • 60g mixed seeds
  • 2tbsp flaxseeds (optional)
  • 25g desiccated coconut
  • 2tsp vanilla extract
  • 50g unsalted butter or coconut oil
  • 2tsp ground cinnamon
  • 1tsp ground turmeric (optional)
  • ½tsp freshly ground black pepper (optional)

Method

Preheat the oven to 200°C/gas 6. Line a baking tray with a silicone baking mat or baking parchment.

Put the dates into a large mixing bowl and add the boiling water. Use a fork to mash them to a thick pulp. Add the remaining ingredients and mix thoroughly.

Spread the mixture onto the lined baking tray and bake for 10–12 minutes until lightly browned. Remove from the oven and set aside to cool. Store in an airtight container for up to 2 weeks.
